Bring back the time. I need all of the time (and all of the thyme because I seriously love it). Since when did the speed of time quadruple? When I was a kid, minutes wafted into hours and hours stretched into days. And somehow, once again, adulthood has stolen something that used to be mine. Just like that. Go right ahead and reverse my childhood concept of time. That’s fine. My two hour day yesterday was all I wanted anyway. Definitely didn’t want any more time, thank you.
It has become our wonted place to whirl in a wistful dance with time. Yet, if we can pause–even for a moment, it is worth considering that we may not be required to succumb to lost time. While most of our days are comprised of what feel like musts, some of those musts might be maybes and some of those maybes may need to cease.
As I attempt to amend my approach to time, I am in eager pursuit of the things that I truly love. Restless in the pursuit of spending time in my passions, in the things that make life shoot like light out of my fingertips. Ultimately, I want to fill my days with things that make my heart explode for Jesus.
With that in mind, I can’t say that the nearly three hours I spent in the kitchen after work on Monday helped with my quest for recovering time. Especially when the highly rated recipes I made turned out to be completely subpar. Total bummer. Total waste of time.

Let me warn you about the ease of the dish, I don’t want it to take you by surprise. Season with salt and pepper. Dump five ingredients onto the chicken and evenly coat. Put it in the oven and turn once. Throw under the broiler and voila! Easy Lemon, Garlic, and Thyme Chicken.
Lemon, Garlic, and Thyme Chicken Thighs
Preheat oven to 375ºf.
In a large bowl, season chicken with salt and pepper. Toss with olive oil, garlic, lemon zest, lemon juice, and thyme until evenly coated. Place in a baking pan and bake for 30 minutes skin side down; flip and bake for 15 minutes (looking for an internal temperature of 165º). To finish, broil for five minutes or until golden brown. Allow to rest for ten minutes before serving.
